Dump all ingredients in order (top to bottom) in bread machine. You will select the basic dough setting. This should take 2-2 1/2 hours. Once dough is done, portion out into 8 sections and shaped into bun/ball shape. Put on baking sheet and allow to rise for 1 hour. Bake at 350 degrees for 12-15 minutes. You can brush the tops with butter or egg wash and add sesame seeds before baking if desired.

*The bread machine I have was purchased in Australia, but this one is very simliar for my American Friends, Bread Machine

Mexican style Tortillas

Ingredients

3 cups flour
1/4 cup olive oil
3/4 cup cold water
1 tsp salt
1/4 cup extra flour (for rolling out tortillas)

Instructions

Combine all ingredients except the extra flour. Make small balls from the dough. Sprinkle a little flour on each. Roll them out one by one on flourered counter (or use a tortialla press to flatten them). Cook in a pan for about 30 seconds on each side. Wrap in kitchen towel once finished cooking to preserve heat. Serve warm.

These take Taco Tuesday to the next level! Yum!!

Delicious Pizza Dough https://nohighercalling.org/delicious-pizza-dough/ https://nohighercalling.org/delicious-pizza-dough/#respond Fri, 10 May 2024 05:51:59 +0000 https://nohighercalling.org/?p=1623

Pizza Dough

Ingredients

5 cups flour
1 1/2 tsp salt
1 1/4 tsp yeast
2 tsp sugar or honey
1 Tbsp olive oil
2 cups warm water

Instructions

Dissolve the yeast and sweetener in the warm water. Once the yeast has activated and become “frothy”, add other ingredients. Knead for 10 minutes. (I do this with the dough hook attachment with my KitchenAid Mixer.)

Spray glass bowl with olive oil and transfer dough to bowl. Allow to rise. This dough can rise in 1-2 hours at room temperature or overnight in the refridgerator. If allowing to rise in the fridge, let it sit out at room temperature for an hour or so to warm up before using.

Transfer dough onto cookie sheet, pizza pan, or pizza stone. Stretch and shape dough into a circle shape with around 14″ diameter (more or less depending on desired thickness.) Allow to rise another hour.

I bake the dough for 10 minutes at 400 degrees before adding toppings. This helps ensure that the dough gets cooked thoroughly. Once pizza is assembled, bake it for 15 minutes or so.

Enjoy!

Our Favorite Sandwich Bread https://nohighercalling.org/our-favorite-sandwich-bread/ https://nohighercalling.org/our-favorite-sandwich-bread/#respond Fri, 10 May 2024 05:42:40 +0000 https://nohighercalling.org/?p=1620

Our Favorite Sandwich Bread

Ingredients

3 cups warm water
1/4 cup sugar
1 1/2 Tbsp yeast
1/3 cup oil
1 Tbsp. salt
6 – 7 cups flour

Instructions

In a large mixing bowl, dissolve yeast in warm water and sugar. Let sit 10 minutes until the yeast has become “frothy” on top. Add the oil. Add the salt and flour (starting with 6 cups of flour). Mix all together. Knead the dough thoroughly until all ingredients are incorporated, and dough is smooth, elastic, very slightly sticky, and pulls away from the bowl (6-10 minutes). As you knead the dough, you may add more flour as needed, and repeat the process until dough reaches the desired consistency. (*The kneading can be done in a KitchenAid Mixer with the dough hook attachment.)

Cover the bowl of dough with a dish towel or plastic wrap and let rise until doubled (an hour or more depending on how warm your kitchen is.) You may speed up this process by placing the covered bowl inside the oven with the oven light on, and another bowl of warm water sitting on the lower rack.

Punch the dough down, divide and and form into 2 loaves. Place the dough in 2 greased bread pans. (I use 9″ pans.) Cover and let rise till the top of the dough is an inch or two above the bread pans.

Bake at 375 degrees for 25 minutes. Remove the baked loaves from their pans immediately, and place on a cooling rack. Slice, and serve warm with butter and honey.

Store in an air-tight bag or container.
